This makes a very light cornbread. It is sweet, so you may want to cut down on the sugar!
1 c. butter
1 c. sugar
4 eggs
2 c. buttermilk (2-1/3 c. if needed)
1 tsp. baking soda
2 c. cornmeal
2 c. flour
1 tsp. salt
Preheat oven to 375 degrees. Grease an 9x13 inch pan. Melt butter. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour and salt until well blended and few lumps remain. Add up to 1/3 c. buttermilk if needed to make it the right consistency. Pour batter into the prepared pan. Bake in the preheated oven for 30-40 min, or until a toothpick inserted in the center comes out clean.
